During my 14+ years as a vegan, I have developed a number of very quick vegan lunches that I make time and time again.
I am the kind of person who doesn’t want to spend hours in the kitchen making lunches as I just want to get on with my day. So I specifically make lunches that can be made in just a few minutes.
Taste is very important to me, so I maximize the tastiness of each recipe in the shortest time possible.
All of the recipes on my blog are vegan, gluten free, and also free from refined sugar and heavily processed ingredients. So you know that all of these lazy vegan lunch ideas pack a nutritional punch.
Another thing that is important to me is to keep the calories of all of my main meals under 400 so that I can stick to my calorie requirements for the day and keep my weight going down rather than up.
